Collaborative work between the Jiranek laboratory at UA and partners in Bordeaux presented recently by Ana Hranalovic at the Enoforum Web conference 2021 has won the OENOPPIA prize for the best research on oenological products. This research explores the use of a bio-acidifying yeast Lachacea thermotolerans to boost the freshness of wines from warm climates.
The conference was attended by >5000 participants across 70 countries, and the program featured some 40 talks selected from >100 submissions, selected based on their relevance for modern wine production. A/Professor David Jeffery was also featured in the program.
The research will now be presented at EnoForum USA and EnoForum Italy in May.
